The influence of furanogen substance (proteins and pentosans) from hops was such as to cause in beer a more pronounced separation of middle-molecular protein fraction B. The negative influence of long preparation of wort with hops as well as the advantage of the use of hops extractors has been thus proved. The negative influence of furanogen substance and some fractions of proteins has not been proved with certainty.
