Separation of yeasts from fermented mash by flotation has - as can be seen from the experience of some Soviet plants - several advantages. It saves much labour and electric energy, eliminates the first stage of separation and provides favourable conditions for automation. On the other hand there is also one weak point of the method, viz. excessive losses of yeast substance, when the fermentation process is not regular. The design of a typical Soviet flotation machine is described in detail.
