Effect of sulphites upon the fermentation of Na - bisulphite waste liquor.Peer-reviewed article

The article deals with the effect of anorganic forms of sulphites - which belong to harmful factors interfering with alcoholic fermentation - upon the fermentation of Na - bisulphite waste liquors. Recommendations are given for degassing and neutralizing liquors. The maximum concentrations at which the inhibiting effect of sulphites is apparent are as follows: for free H₂SO₃ - 0,005 %, for NaHSO₃ - 0,05 % and for Na₂SO₃ - over 1 %.
