The article deals with the effect of anorganic forms of sulphites - which belong to harmful factors interfering with alcoholic fermentation - upon the fermentation of Na - bisulphite waste liquors. Recommendations are given for degassing and neutralizing liquors. The maximum concentrations at which the inhibiting effect of sulphites is apparent are as follows: for free H2SO3 - 0,005 %, for NaHSO3 - 0,05 % and for Na2SO3 - over 1 %.
