The article deals with the experience on a new yeast propagator unit of an open type which has been installed in the fermenting room of the Strakonice brewery. The propagator consists of a small tank of 2 hl capacity, from which the fermenting wort is pumped into a big tank fabricated of stainless steel and containing 5 hl of wort. In the appropriate stage of fermentation more cold, standard wort is added to bring its amount in tank to 30 hl. The results so far achieved are very good. The described system supplies with yeast the brewery producing 160 000 hl of beer per annum. Fresh yeast starter was required only four times. Both microbiologic and physiologic conditions of yeast are very good. The author outlines technique used for starter preparation and evaluates the advantages of the system.
