A review of present knowledges referred to a production, properties and genetic determination of the enzyme amyloglucosidase of species Saccharomyces is given. Some examples of the application of S. diastaticus as a donor cell of the DEX gene for a preparation of new yeast species using methods of a sexual hybridization, induced fussion of protoplast and transformation are described.
