The importance of analysis of beer for the effectiveness.Peer-reviewed article

The Bolling's formula concerning calculation of the amount of original beer wort with regard to later modifications is discussed. The authors concludes, that for practical use it is necessary to assume on average difference of 0,1 % weight between the original wort, which was estimated directly before fermentation and the wort calculated according to the result of analysis of beer.(In Czech, English summary only)

In this article the principles of technological processes with the use of Kropff's device are described. Through their application the working capacity of recent malt factories may be raised. It enables also better mechanization and organization. In the case, that the production of malt in Kropff's device does not exceed the production on floor malting system, then both kinds of mal, when suitably mixed, yield the requirement quality of resulting malt.(In Czech, English summary only)

The removing of incrustation for the evaporators in distilleries.Peer-reviewed article

For the distilleries, in which the spirit is made of molasses the authors suggested removing of incrustation by means of boiling water-solution of lactic acid. They use for the purpose sewage material containing 30 - 50 % of lactic acid. The boilers are treated with boiling acid diluted to 3,5 % solution, the time of treating one up to tree hours. After this time the incrustation loosens and falls away from the wall of evaporator. When the surface of the wall is rough, the layer of incrusted matter must be removed immediately, for after drying it becomes hard again.(In Czech, English summary only)

The author followed critical temperatures with respect to freezing point in some typical Czechoslovakia sorts of potatoes and came to conclusion, that 1. the freezing point is almost constant and characteristic for every sort. 10 examined sorts of potatoes showed to have the freezing point within the limits of 1.09 to1.90 °C. 2. The differences in critical temperatures depend neither on water content, nor on the size (weight) of potatoes. 3. The differences in freezing points correspond to those in osmotic pressure of cells. 4.
