The author comes to conclusion, that under the given experimental conditions the amylolytic enzyme forms two bots, representing alpha and beta-amylase respectively. It was ascertained, that at the beginning of malting the amylases are blocked by the proteins and their motion is changed or even oppressed. First the growth of proteolytic activity, which is characterized by the presence of 115 to 150 mg of amine nitrogen in100 gof dry matter of malt makes the chromatographic separation of enzymes possible.The malting on the malt-floor brings the best conditions for activation of enzymes. Study of functions of the maltomobile Robinson in operation and the assessment of produced malt quality showed that the machine construction and functions were good and that the maltomobile Robinson could be recommended for operation in our malthouses also from the technological point of view. The study describes a method which can be used for the determination of the actual content of saccharose and raffinose in sugar beet molasses. For hydrolysis, enzymatic preparations are produced by a simple procedure from baker’s yeasts and brewer’s yeasts of the bottom fermentation. Hydrolysis takes approximately for 16 hours (over night). The difference between the results of parallel determinations must not exceed 0.3 %. Saccharose and raffinose contents are necessary for the calculation of fermentable sugar.
