Effect of hop resins upon beer bitter.Peer-reviewed article

The results of laboratory analyses indicate, that the bitter taste of beer is caused mainly by soft resins. Hard resins participate more significantly only in hops used after a long storing. It has been confirmed that for fresh hops the proportions of £+β/3. After a prolonged storing the effect of β - components is more pronounced.(In Czech, English summary only)

By introducing semi-continuous methods the time required for main fermentation can be reduced by 30 % and initial capital investments by 50 %, improving at the same time the utilization factor of the room occupied by fermenting installations also by 50 %. The continuous method shortens the after-fermentation stage by approximately 65 %. The cycle required for brewing beer takes no more than 10 days.(In Czech, English summary only)

The article deals with the methods employed for selecting barley varieties suitable for malting and with the system of classification reflecting their malting properties. The results of analyses made in 1961 confirm, that the best variety of barley frown inCzechoslovakiais "Valtický", though the quality of other popular varieties is also very high.
