New methods have recently been elaborated how - by using alkaline or catalytic process - to prepare on an industrial scale isomerized hop extracts from hop resins. Such extracts are used for the so-called cold hopping carried out in the finishing stages of the brewing process, i. e. during filtering or racking operations. One of the outstanding problems is now therefore reliable analytic determination of the properties of new extracts. The authors have compared four analytic methods using as samples a number of alkaline isomerates (after partial isomerization) and a Belgian preparation called Isopal. Samples of molasses covering two whole campaign periods in a number of big industrial distilleries inBohemiaandMoraviawere analyzed and evaluated applying several selected criteria. It has been found, that generally the percentage of volatile acids in analyzed samples exceeds average values. In roughly 50 % of samples are present nitrites in very small; practically trace concentrations, whereas the concentrations of nitrates are relatively high. Some samples of molasses processed by distilleries in 1974/75 contain high amounts of dextrorotatory compounds, especially of raffinose.
