Beer is indisputably a healthy beverage. Its consumption brings to the consumer many benefits, especially refreshment and relaxation. Beer has a positive effect on digestion, and is a source of essential nutrients and micronutrients. This study deals with the taxonomy of brewing yeasts, methods of their classification and identification. The hybrid character of brewing yeasts is highlighted, along with related problems in their classification. Molecular biology methods mostly used for the classification of brewing yeasts focus on the differences in chromosomal and mitochondrial DNA, i.e. genotyping. Polyphasic taxonomy of yeasts is based on a combination of genotypic, phenotypic and chemotaxonomic methods. The contents of polyphenolic compounds and the antioxidative properties of the important Czech hop varieties Saaz, Sladek, Premiant and Agnus were evaluated in selected samples (24, 12, 12 and 4). The hops were extracted with a water/acetone solution, and then analyzed. The results were compared with those from hops harvested in 2011 and 2012. The content of total polyphenols (TP), which are important in terms of the Protected Geographical Indication (PGI) as well as the contents of anthocyanogens and flavonoids are dependent on the variety. Publication is the first of a three-part history study of ice-houses in Jundrov, Brno. It summarizes the origin of the largest commercial ice-houses in the second biggest town in Czechoslovakia. From the end of the 19th century to the origin of Czechoslovakia the icehouses were in property of several owners. Among others, they were owned by Julius Brauner who ran Brno's brewery in Pekařská Street. Till the 1910 three wooden ice -houses were built; they supplied Brno's pubs, butchers, breweries and confectioners.
