The results of comprehensive experimental research work confirm that amino acids have important, manysided effects both on breweing technology and the quality of beer. If the proportion of surrogates., i.e. of grain used without previous malting, is high, the required amount of amino nitrogen in wort can be secured by adding into it suitable enzymatic preparations while it is being hopped. The authors have elaborated and applied two methods for the determination of CO2 in beer, viz. a modified titration method and a manometric one. Both methods were used to analyse the samples of 7°, 10° and 12° bright beer. Mathematic statistics is used to find the limits of variations of the results obtained by CO2 analyses of a set of beer samples. The coefficients of variation calculated from the results of titration and manometric methods do not exceed ± 5%. So far sewage waters from the brewery were purified in a system of fishponds, the total area of which was 28 ha. Now the ponds have been replaced by stabilizing basins, since the amount of sewage waters is rapidly growing owing to the rising production of beer which at present is practically twice as high as it used to be some time ago. the basins occupy 27 haand must daily purify in average 2178 m3of sewage waters characterized by BOD5 787 mg/1l.
