The article deals with a so called single-phase beer production based on combined fermentation and on secondary fermentation in the same vessel. Applying the large capacity conical-bottomed tanks installed in free area, the equipment of the brewery is simplified and the demanding requirements on the structure of fermenting room time of the fermenting process of 10% and 12% beers by roughly 60 a 65%. The authors have experimentally tested the efficiency of several yeast growth stimulants applying as a criterion their influence upon the growth dynamic of yeast Candida utilis cultivated in a shaker and laboratory fermentors on stillage distillery slops from molasses distillery. The following preparations were used as stimulants: destiobiotin, gibberellic acid and a special compound containing trace elements. All of them are used as stimulants by plants making bakery and feed yeast cultivated on molasses, hydrolysates and paraffins. A new multi-stage tower fermenter, which has been recently developed, is characterized by unit construction, parallel flow of liquid and gaseous phases and mechanical mixing system. It consists of five stages separated by perforated plates. Each stage is fitted with two disc type turbine impellers and auxiliaries intensifying mixing are regulated in each of the stages individually.
