Contribution to the utilization of bitter substances of hop.Peer-reviewed article

The article describes the effect of some technological conditions on losses of bitter substances during wort and young beer production. The increased protein content in wort results in a drop of the quantity of bitter substances in hopped wort. Eliminating a part of high molecular proteins from wort lower losses in bitter substances are observed. Changes in the content of polyphenols of hop had no influence on the yield of bitter substances. Also the copper content in wort had no influence on the content of isocompounds. Possible origins of N-nitrosamines are mentioned in the article. There are discussed reaction conditions especially with respect to the environment, pH, catalysts and inhibitors. A new antifoam agent Depenol 611 was developed in Czechoslovakia for the use in baker's yeast production. At first, the efficiency and properties of Depenol were tested in laboratory. The results obtained from the full-scale experiments performed during the production of baker's yeast are given. Depenol was compared with Kontramin 210 which is commercially used with concentrated molasses media at present in Czechoslovak yeast factories. Some qualitative properties and the results of the tests regarding its hygienic and toxicological undefectivity are mentioned. For a rapid estimation of the antifoam efficiency a modified method of Morse-Moss is proposed....

During the cultivation of Streptomyce rimosus and oxytetracycline biosynthesis D. O. C. and OUR were determined. According to the rheological behaviour and values of D. O. C. a stepwise aeration program was applied in industrial scale. Significant savings of antifoams together with higher harvest of cultivation broth from fermenters were achieved. The microflora of grapes, musts and young wines was studied in the vine region of the Little Carpathians. From a number of 31 grape samples 285 yeast strains had been isolated and identified in the years 1979-1980. The frequency of the technological most important species S. cerevisiae was 91,6 and 100 % respectively a 100 % frequency of the species S. cerevisiae could he confirmend by identification of 228 strains of this species from 398 strains isolated all together. 171 strains were also isolated and identified from young wines prior to and after first racking in the same period.
