The results of monitoring of the mycoflora of brewing raw-materia1s from crops of 1985 to 1988 with respect to the isolation and identification of strains that could be potential producers of mycotoxins are described. Some recommendations resulting in the minimization of the occurence of micromycetes in raw-materials for brewing are discussed.(In Slovak, English summary only)

Determination of cellulase activity using the tablet S-Test Cellulase Cx.Peer-reviewed article

The tablet S-Test Cellulase Cx was routinely used for the determination of cellulase activity Cx in the enzyme preparate "Cellulase" (production strain Trichoderma viride) from Cooperation Farm Petrova Ves. In the comparative method carboxymethyl cellulose, as the substrate, was enzymatically hydrolyzed and reduced saccharides formed were determined by the reaction with 3,5-dinitro salicylic acid. For the cellulase activity Cx of 2,33 μkat.g-1 the value of a variation coefficient was vk = 3,6 %.(In Slovak, English summary only)

New pulver cleaning and sterilizing agents prepared in PRAGOCHEMA, Uhříněves are described. Pulver detergents for bottle cleaning, aluminium keg cleaning, sterilizing agents for brewing equipment and special additives for a prolonged efficiency of cleaning/sterilizing solutions are discussed. The protoplast fusion for a preparation of five industrial strains of wine-making yeasts from the genus Saccharomyces with the killing effect K1 type was used. The strains obtained had stable killing characteristics together with their original technological properties. After successful pilot-plant tests the new strains could be incorporated among other pure cultures applied in wine-making.(In Slovak, English summary only)
