The article deals with questions of acid washing of brewer's yeast. An influence of mentioned method of acid washing with an elimination of a bacterial contamination of yeast and their ability of a successive adaptation to lower pH by a repeated acid washing was confirmed. The mentioned method of the acid washing was tested at working scale with positive results.(In Czech, English summary only)

After isolation of the thermophilic production strain the results of the optimization of principal fermentation conditions, that of the composition of a production medium and the quantity of inoculum are described. The method of the planned experiment was used for the procedure of optimization. Also the process behaviour in larger fermentation volumes (up to1500 l) is analyzed. The possible medium decolourization, product isolation and purification and its comparison with the same commercially sold product are discussed. The optimum medium composition and culture conditions from standpoints both of kinetic as well as of substrate conversion are developed.
