Influence of Oxygen on Continuous Fermentation of Wort with Immobilized Yeast.Peer-reviewed article

In the work we investigated influence of the soluble oxygen concentration on the increase of free and bound biomass in fer-mentor with yeast immobilized in pectate gel during continuous fermentation of wort. Fermentation took place in "gas-lift" reactor and we worked at four different oxygen concentrations. We have found that at the oxygen concentration 2,4 and 6 mg/1 wort. the concentration of biomass has increased from originál value 50,4 g/1 gel up to 70,3 g/l, which corresponds to the saturated value of carrier with biomass. In the second part of publication are described different ways of elimination of disadvantages of using sodium hydroxide during bottle washing. These groups of additives are discussed: phosphates, phosphonates, gluconates, substances forming complexes, polymeric carboxylic acids and defoaming agents. With the exception of the last group, all additives are applied for sta-bilisation of water hardness.(In Czech, English summary only)

The article summarizes and on concrete examples documents knowledge of technical solution and function of brewery effluent treatment plants working on aerobic, anaerobic oř combined anaerobic-aerobic principle. Above-mentioned types of effluent treatment plants are discussed from technical point of view, however not even economic viewpoint is not omitted. The conclusion contains theses enabling fundamental orientation in deciding which type of effluent treatment plant in conditions of concrete breweries to choose.(In Czech, English summary only)

By means of laboratory brewing turbidimeter, enabling measurement both in bottles and test tubes, photometric growth curves of microorganisms found in brewing process, concretly culture brewery yeast and isolate of lactic acid bacteria from contaminated beer were monitored. The principle of method, practical ways and procedures of measurement are described, SW graphically processed results of automatic measurement of photometric growth curves are attached. Examples of possible application of the method during current microbiological checking in beverage industry are mentioned.(In Czech, English summary only)
