Qualitative and Economic Aspects of Ageing of Czech Hop Varieties.Peer-reviewed article

The dynamics of ageing processes in Czech hop varieties (Saazer, Sládek, Premiant, Agnus) was followed by long-term storage tests in the period since 2000 till 2002. Raw hops and pellets G 90 were storaged for 12 months in an air-conditioned and non-conditioned warehouse. Rate of ageing was analyticaly evaluated by a decline of bitter acid and hop oil contents, further by determination of hop storage index (HSI) and oxydative hop oils index (OIS). In the year 2003 the following varieties were registered in the Slovak Republic: NITRAN (9), MESSINA (6), PASSADENA (6), PEDANT (7) and SALOON (6). Newly registered barleys have on the average a very good content of the extract in malt and strong activity of all followed groups of enzymes. PCR method for detection of the most frequent bacterial contamination in brewing industry - lactic acid bacteria was tested. Many different biochemical methods have been used for characterization of bacterial isolates genus Lactobacillus. Genomic DNA from 14 different strains of this genus was isolated and characteristic part of DNA was amplificated. All isolates were confirmed as Lactobacillus genus members by PCR methods. In 2003, forty years passed from the death of Konrád Dvorský, an important Czech breeder. The editors managed to obtain a biography typewritten by this practitioner, researcher and pedagogue which he wrote at the end of his life. Thanks to kindness of a document owner, Ing. Peter Svačina, who is an author of the postscript at the end of the biography, we are able to bring it to our readers.
