Trichothecenes, products of the secondary metabolism of microscopical fibrous fungi of the species Fusarium, belong to one of the most followed mycotoxin groups. Winter wheat, rye, triticale and barley are the cereals most frequently attacked by Fusaria but we meet them on spring barleys, wheats and oats as well. Rot of seedlings, leaves and head blight or rot of roots and ears are the most frequent signs of the pathogenic state of agricultural crops attacked by the fibrous fungi of the species Fusarium. Trichothecenes are resistant to heat treatment and thus can pass to final food products, for example flour and bakery products or beer. The objective...

Basic Principles of Malting Barley Breeding (part1).Peer-reviewed article

Ivan LANGER

Kvasny Prum. 2003; 49(6): 154-159 | DOI: 10.18832/kp2003010

The article sums up current knowledge of malting barley breeding work. The first part is, except of the brief description of barley Hordeum vulgare ssp. vulgare, its genetics and chromosomal map, focused on the process of selection work. Historical and currently used conventional methods are described (pedigree, population, combined population- pedigree, and early testing method) with their advantages and negative sides. The second part of the article first deals with the selection strategy for individual characters (yield, agricultural qualities, disease resistance, malting quality). Each feature is briefly described and an appropriate method of selection...

Kvasny Prum. 2003; 49(6): 162-163 | DOI: 10.18832/kp2003011

Archeological research conducted by the Polabské Museum in the town of Nymburk (470 U pošty) in 1996-7 discovered a part of a maltery from the late 16th century. It was saved due to constructor's understanding and after its preservation it was opened for public in the basement of a new building. This object, mainly its vaulted kiln furnace, bases of the building and an adjacent cellar were proposed to be included on the list of immovable cultural objects. Findings of pottery, glass, iron tools etc represent remarkable closed sets, the analyses of which will represent a more general contribution for study of material culture of the renaissance town.
