Future of wort concentrate in brewing industry seen from economical point of view.Peer-reviewed article

The author attempts to reply to the question, whether the new, interesting idea of brewing beer of wort concentrate can be expected to find wide application in brewing industry. From a thorough analysis of three economic models, characterizing typical investing situations he derives the conclusion, that under existing conditions, the method is not economical attractive enough to supercede proven, traditional methods. Only breweries in atypical  situations may find the new methods. Only breweries in atypical ones. It cannot be expected that in near future new breweries will be built without brewhouses and that in seasonal peaks beer will be brewed of prepared and stored wort concentrate. Nevertheless the research works should go on and pilot plant should be built to develop the method to the stage practical applicability. It is worth mentioning that the described method was realized  on the commercial scale at a Czech brewery more than 100 years ago,i.e. in 1851.
