The presence of bacteria in beer and brewing semiproducts affects unfavourably the determination of yeast, since after cultivation in appropriate media it is difficult to identify correctly the colonies of yeast. Two methods are used to eliminate the disturbing effects caused by bacteria. One of them is filtration trough a SYNPOR 4 filter. Bacteria can pass through the filter while yeast is trapped. The other is based upon the effects of streptomycin added to medium [50-100 g /ml]. Streptomycin may be combined with penicillin [100 g /ml]. The streptomycin method can be recommended for routine analyses which are carried out to identify culture and wild...
Polyetylene stoppers for bottling sparkling wine.Peer-reviewed article
R. VOLDŘICH
Kvasny Prum. 1973; 19(7): 152-156 | DOI: 10.18832/kp1973013
The author has developed polyethylene stoppers for bottles with sparkling wine which combine strength with sufficient elasticity enabling easy adjustment to varying diamaters of bottlenecks. The sealing properties of new stoppers are as good as those of cork ones provided the bottles are stored in horizontal position. The dimensions of new polyethylene stoppers are quite stable and there is no tendency to shrinkage. In its definite form the stopper has an inner sex-pointed reinforcing brace and resists without collapsing even very high pressures.(In Czech, English summary only)
Some problems of wine quality evaluation arising from the results of the 1st world wine competition.Peer-reviewed article
E. MINÁRIK
Kvasny Prum. 1973; 19(7): 156-159 | DOI: 10.18832/kp1973014
The article deals with the aim and results of the First World Wine Competition held in 1972 in Budapest, as well as with the classification of various categories of wine produced in participating countries. For Czechoslovakia the contest was extremely successful and in competition with many wine producing countries her products were granted many prizes. The quality of wine was valuated at the competition by applying a new organoleptic method introduced by Vedel. This method will be now generally used at international events and it is therefore necessary to adjust accordingly some existing practices and to utilize experience acquired at the Competition.(In...
