Methods commonly used for malt analyses undergo a large critism at present. Some other criteria are required which could give more detailed information about the effect of malt on a technological process and beer quality. It is necessary to elucidate and specify the combined effect of amylolytic, protheolytic, cytolytic and oxido-reductive enzymes which are activated during a measurement and to evaluate substances which originate as a consequence of physico-chemical reactions taking part in malt during kilning. An occurence of residual strange substances calls for a further research of analytical methods. The new elaborated methods should be applied...

Estimation of dimethylnitrosamine in beer and malt by differential pulse polarography method.Peer-reviewed article

A new developed method for the estimation of traces of dimethylnitrosamine in beer and malt is described and evaluated. A princip of this method is in an isolation of dimethylnitrosamine from beer or malt into a small volume of diluted sulphuric acid. In this solution, dimethylnitrosamine is estimated by differential pulse polarography and demonstrated qualitatively by photochemical fission. The utility of this method was verified in the analyses of eight samples of 12 % pale beer, two samples of 18 % dark beer, one sample of nonalcoholic beer, and four samples of malt. The reproducibility is about 8 %, the lower limit for the estimation is from 0.1...

A consumption of washing media is dependent of many factors. In addition to a quantity of impurities coming into a washing mashine, also a good function of mashine and a suitable operating mode of washing influence the proper effect. A high concentration of the washing lye and a frequent exchange of baths without checking have no positive effect on washing. Only higher losses of washing media result from this mode of work. Yeast cultivation on ethanol with oxygen limitation and nutristat control.Peer-reviewed article

Using a continuous cultivation of yeasts on ethanol with a nutristat control and oxygen limitation it was found that with a change in dilution or growth rate, respectively, the basic culture parameters are changed, too. A decrease of growth rate manifested itself in a decrease of biomass yield and productivity and in a rise of a specific consumption of oxygen. The worse culture parameters observed at lower growth rates are elucidated by an increased consumption of energy or a substrate, respectively, which is used for a maintenance of the yeast cells.
