The new criterion for a determination of malt friability is suitable from the standpoint of the quick and informative results of the degree of malt modification. The method is suitable for a plant-scale checking due to its simplicity. The value of friability reflects changes in the flour - crush EBC, the Kolbach Number, RE 45 °C, final attenuation and viscosity.(In Czech, English summary only)

The colour of red wines cause anthocyanin pigments that come into must together with tannins at the start of fermentation of blue grapes. Anthocyanin pigments are accumulated in the cells of grape akin and in outside layers of the pulp. The accumulation of anthocyanin and sugars in grapes of Blue Franconia variety and Saint Lawrence variety in the phase of ripening was observed. Also quantities of anthocyanins and sugars in both varieties were compared. Immobilization of large biosystems has been expanding at a rapid rate for nearly a decade. In this connection, the article is a comprehensive introduction into experimental and theoretical developments. Several topics reviewed here proceeds from an introduction to the discussion of basic aspects of biosystems immobilization to the chapter introducing immobilization techniques. The article also includes a survey of physiological, biochemical and cytological alternations of immobilized cells and organelles as well as an overview of the immobilized non-microbial populations.(In Czech, English summary only)

The application of immobilized enzymes can be divided into three groups. First group comprises medical applications. Here both beads and an immobilization technique must no have toxic effect. Second group comprises applications in analytical chemistry. The main requirement is given on the accuracy and the fast response. Therefore, the significant factor is a diffusion of substrate to the active center of the enzyme. Into third group belongs industrial applications of immobilized enzymes for a conversion of various substrates. Here economic factors are emphasized.
