Studying the relation between the chemical composition of beer and its organoleptic properties it is necessary to keep in mind basic differences between the laws of chemistry and laws of sensorial world. The problem must be seen in its complexity. Applied methods, both analytic and other must be reliable and provide data for objective evaluation. The relation in question cannot be studied without applying mathematical statistics and without using a computer for large amount of necessary calculations.(In Czech, English summary only)

The article deals with the present development stage of open yeast propagators and with the scale on which they are used in Czechoslovak breweries. The propagation process is described in detail and the advantages of the new system are compared with conventional method based on the usage of large-capacity propagators of classic form. The author pays also attention to a new system introduced to distribute small quantities of yeast cultures. They are sent to customers in special insulated small containers. The article deals with the performance of an automatic packing machine PAK-MASTER III manufactured inSwedenby EMBA SUNDS A.B. [Örebro] and installed in the České Budějovice brewery BUDVAR. The capacity of the machine is as high as 15 boxes per minute which makes 18 000 bottles per hour. The machine operates on the so called Wrap-around principle combining three operations in a single working cycle, i.e. box forming, depositing of bottles and box sealing. The author compares the new system with the conventional one into folded boxes and evaluates merits and demerits of both systems.(In Czech, English summary only)

The article outlines the extent to which gaseous fuels can be used to advantage for heating various technological installations in breweries and malt houses. The results of investigation which has been carried out speak for straight gas heating in brewhouses and malt kilns. Wine industry in Bulgaria has been in recent years undergoing far reaching modernization. Grapes are harvested with combine harvesters which together with modern transportation means reduce the length of vintage. Grapes are processed on standardized production lines, continuous fermentation is used on a steadily increasing scale in processing both red and white wine, plate and drippling filters replace obsolete types.
