Organic farming is a trend in official agricultural policies of the European Union. It prioritizes quality over quantity, which places it in contrast to the conventional farming aiming for the maximal profit . The history of organic hops growing began in the mid-eighties of the last century in Bavaria. In 2011 organic hops was grown on 55 farms in 10 countries, cultivating in total 187 hectares (ha) of hop-fields with an annual production of 240 t of certified organic hops. The study evaluates the quality of malting barley from the 2011 harvest in the Czech Republic . It detected above average starch content and portion of sieving fractions over 2.5 mm and below average content of nitrogenous substances when compared to the longterm values. In some lots the sprouting (both visible and hidden) of caryopses occurred due to the higher moisture content, this negatively affected the germination capacity of barley lots. In recent years, suspicions arose that vinegars may be adulterated by an addition of synthetic acetic acid. Detection of adulteration is based on tracking markers that indicate a failure in compliance with technological processes, reduction of natural components of raw materials or components resulting from vinegar fermentation. Adulterated vinegars may also contain precursors of the production of synthetic products. Application possibilities of chemometric markers are limited; in case of fermented vinegars the determination of the components derived from raw materials can be used, but spirit vinegars are usually very pure.
